The Bunmei 24cm Oroshi Knife is a Japanese all-purpose cooking knife but used particularly for fish. It looks like a traditional Chef’s or Carving knife but this is not a western-style blade and only features a single bevel. Single-edged knives are able to get incredibly sharp and provide deep precise cuts. An Oroshi Knife can fillet a tuna fish in single cuts. Oroshi translated into English means Wholesale, so these Bunmei Oroshi knives are great for commercial use and are commonly seen in Japanese restaurants and sushi bars.
Bunmei Japanese traditional kitchen knives are made by Yoshikin in Japan, the makers of renowned GLOBAL knives. Each knife is handmade using high carbon Molybdenum/Vanadium Stainless Steel giving the knife excellent edge retention.
