Before sharpening, open the sharpener’s cover and pour water onto the sharpening wheels. This lubrication ensures smoother sharpening and protects both the sharpener and your knife blades. ​
Sharpening Process:
- For Metal Knives: Use the ceramic wheel sharpener with a #320 grit, ideal for stainless steel blades sharpened on both sides.
- For Ceramic and Harder Steel Knives: Opt for the diamond wheel sharpener with a #1000 grit, suitable for harder steel and ceramic blades sharpened on one side only
- Technique: Firmly grip the sharpener and gently move the knife blade back and forth through the appropriate slot, maintaining consistent pressure.
- Finishing: After sharpening, use the integrated water stone, featuring a #1000 grit surface, to refine and polish the blade edge for a smooth finish. ​
Cleaning and Maintenance:
- Post-Sharpening: Open the cover and rinse the interior components thoroughly with water to remove any residual debris. Ensure all parts are completely dry before reassembling or storing the sharpener. ​
Additional Tips:
- Store the sharpener in a dry environment to prevent moisture-related damage.​
- While designed for Kasumi knives, this sharpener is also suitable for other slim Japanese-style blades. However, it is not recommended for specialist items such as Sashimi knives, which are sharpened on one side only, nor for some broader-bladed European-style knives.
