Ingredients:
- 1 cup brown sugar
- 1 cup of butter (or lard)
- 1 cup of self-raising flour
- 1 cup of white breadcrumbs
- 1 teaspoon allspice
- 1 kg mixed dried fruit
- 4 large eggs
- 1 ½ tablespoons of plum jam (or other dark jam)
- 1 teaspoon baking soda
- 1 cup boiling water
Method:
- Rub butter through the brown sugar, then add all other dry ingredients and mix well.
- Beat eggs and add to dry ingredients with the jam, mix through
- Add boiling water to baking soda and add to mixture, mix together until well combined.
- Pack mixture into pudding tin. Put pudding tin into a large saucepan, add boiling water to the saucepan to surround the pudding tin, fill 3/4 the height of the pudding tin.
- Boil for 4-5 hours, topping up water as needed. Allow to stand for 15 minutes, then tip out and serve with brandy custard.
