Your Bread Steel is designed to give you professional-quality results at home. With proper use and care, it will provide years of reliable baking.
Using Your Bread Steel
- Place the Bread Steel in your oven during preheating to ensure it reaches full temperature.
- Bake bread or pizza directly on the steel for crisp crusts and excellent oven spring.
- If you find the bottom of your bread becomes darker than you prefer, place a sheet of aluminium foil directly under the Bread Steel (between the steel and the oven rack). This lowers the surface temperature slightly to prevent overbaking or burning while still delivering an even bake.
Cleaning & Maintenance
- Regular cleaning after every use is not required. Often, a simple wipe with a cloth is all that’s needed.
- If residue builds up that might smoke or smell during baking, allow the steel to cool, then scrub with a firm bristle brush or soft sponge.
- For stubborn spots, use a small amount of hot, soapy water. Rinse thoroughly and dry completely to prevent rust.
- Avoid soaking or leaving the steel wet. Always ensure it is fully dry before storing.
Reasoning Your Bread Steel
Seasoning helps protect the steel from rust and maintains its performance. If the seasoning becomes worn or soap is used during cleaning, reseasoning may be required.
- Apply a very thin coat of high-smoke-point oil (flaxseed oil is recommended).
- Place the Bread Steel in the oven and bake at 500°F (260°C) for one hour.
- Allow it to cool completely in the oven before handling.

- Over time, spots and scratches will naturally appear. These are normal and do not affect performance.
