Emulsions are water-based, alternatives to extracts. The flavour is micro encapsulated in natural stabilisers and suspended in water. This encapsulation enables the flavour to not lose its integrity when exposed to high heat.

1 teaspoon extract = 1 teaspoon emulsion.
Use lemon emulsion instead of lemon zest in your recipes – just substitute 1/2 tsp. emulsion for 1 tsp. zest.
