Dive into a refreshing Raw Courgette Salad, where thin ribbons of courgette are beautifully dressed with Pepper & Me’s zesty How I Mint Your Mother sauce. This vibrant dish features creamy burrata, toasted pine nuts, and sweet orange segments, all topped with fresh basil for a burst of flavour.
Method:
- Using a peeler, peel the courgettes into thin ribbons.
- Add them to a bowl with enough How I Mint Your Mother dressing to coat them nicely, but not to drown them.
- Arrange the dressed courgette ribbons on a serving platter.
- Roughly tear the burrata and place it on top of the courgette ribbons, along with the toasted pine nuts, segmented orange, and basil leaves.
- Season with cracked pepper, Man Grind, and lemon zest to taste.
