Light, fluffy, and irresistibly soft, this banana bread is baked with ripe mashed bananas, plain flour, baking soda, milk, egg, sugar, and a hint of vanilla essence. Perfect served warm with a generous spread of butter.
Method:
- Preheat your oven to 170 °C fan bake and line a 24 × 13 cm loaf tin with baking paper
- In a large bowl, mash the bananas with a fork
- Add the melted butter, egg, sugar, and vanilla essence—stir to combine
- Sift in the plain flour, baking soda, and salt, then gently fold until just combined (to retain softness)
- Pour the batter into the prepared tin and spread evenly
- Bake for 50–60 minutes, until the top is golden and a skewer inserted in the centre comes out clean
- Once baked, let it cool before slicing
Notes & Tips:
- VJ notes that if you’re using frozen bananas, you can microwave them to room temperature before using
- The banana quantity is flexible—as long as you have at least 1 cup of mashed banana, you’re good to go
