Light, fluffy, and irresistibly soft, this banana bread is baked with ripe mashed bananas, plain flour, baking soda, milk, egg, sugar, and a hint of vanilla essence. Perfect served warm with a generous spread of butter.

Method:
  1. Preheat your oven to 170 °C fan bake and line a 24 × 13 cm loaf tin with baking paper
  2. In a large bowl, mash the bananas with a fork
  3. Add the melted butter, egg, sugar, and vanilla essence—stir to combine
  4. Sift in the plain flour, baking soda, and salt, then gently fold until just combined (to retain softness)
  5. Pour the batter into the prepared tin and spread evenly
  6. Bake for 50–60 minutes, until the top is golden and a skewer inserted in the centre comes out clean
  7. Once baked, let it cool before slicing

Notes & Tips:

  1. VJ notes that if you’re using frozen bananas, you can microwave them to room temperature before using
  2. The banana quantity is flexible—as long as you have at least 1 cup of mashed banana, you’re good to go
