Packed with sausage, bacon, cheese, and fresh herbs, this easy baked egg slice is perfect for meal prep, weekend brunches, or a hearty grab-and-go breakfast.
Method
- Preheat oven to 180°C Fan Bake.
- Remove sausages from casing and fry in a little oil over a medium high heat for 5-7 minutes until browned and a nice crumble has formed.
- If using spinach, add it to the pan in the last minute or two to wilt.
- Add the eggs, cottage cheese, cheese, and Man Grind to a blender and blend for 30 seconds until smooth.
- Line a large baking dish or deep slice tray with baking paper and add the crumbled sausage in an even layer.
- Cut bacon into small strips and sprinkle over the sausage.
- Pour the egg mixture over the sausage and bacon and sprinkle with the chopped parsley and then the Man Rub.
- Pop in the oven and bake for 20 minutes or until the egg is set.
- Cut into 6 or 8 portions. This will keep in the fridge for 4-5 days.
