  • 1 cup low-fat cream cheese
  • 2 tbsp granulated sweetener
  • 4 scotch finger biscuits, crushed
  • FOR THE MIXED BERRY SWIRL:
  • 1 cup frozen mixed berries
  • 2 tsp granulated sweetener
  • 2 tbsp water

With our mixed berry cheesecake protein ice cream recipe created in the Cuisinart Cool Scoops Ice Cream Maker, you’ll savour every spoonful without a hint of guilt. Packed with protein and bursting with berry and cheesecake flavors, this is the treat that keeps on giving—pleasure to your palate and power to your muscles. Ready, set, scoop!

Method:

  1. Place the milk, protein powder, cream cheese and sweetener into a high-speed blender and blend until smooth.
  2. Next, turn the ice cream maker on and pour the mixture into the frozen freezer bowl. Mix for 30 to 35 minutes.
  3. In the meantime, make the berry mixture by adding the berries, sweetener and water into a small saucepan on medium heat, stirring occasionally until the berries break down, about 5 minutes. Blend the berries in a high-speed blender until smooth, then place them into the fridge to cool.
  4. Fold the crushed biscuits through the ice cream, then pour half of the ice cream into a freezer-safe container, spoon over half of the berry mixture and swirl it through the ice cream with a toothpick or butter knife. Repeat with the remaining ice cream and berry mixture.
  5. Place into the fridge for 4 hours and enjoy!
