WÜSTHOF Performer knives combine centuries of craft expertise from Solingen with state-of-the-art manufacturing. They glide impressively easy through food, staying clean, as food doesn’t stick to them. The groundbreaking Hexagon Power Grip with honeycomb structure ensures safety and precision while the carbon coating gives them a unique level of hardness. And they are forged from one piece of WÜSTHOF stainless steel and finished by experienced knife-makers.

To create the Performer series, WÜSTHOF’s designers and engineers combined state-of-the-art technology with 200 years of expertise in knife craft. The Performer knives are manufactured in one of the world’s most advanced knife production facilities. Hand finishers ensure that the knives are perfectly balanced and feel like a natural extension of the hand. A Performer knife is ideal, whether you are preparing food at home or working with high speed and precision in a professional setting. A simple wipe after use leaves the blade shiny and clean as new.

Diamond-like carbon coating

The Diamond-Like Carbon (DLC) coating, created for space travel and motorsports, increases the surface hardness of WÜSTHOF steel from 58 to a unique 104 Rockwell. It is virtually immune to adverse external effects and extremely resistant to heat. WÜSTHOF is the first knife manufacturer in the world to use this technology on a fully forged knife with bolster.

Non-stick Lotus Effect

The surface’s hydrophobic ‘lotus effect’ causes freshly cut pieces of food, such as slices of juicy onion, to slip away. Cutting feels almost frictionless. The blade repels acids from citrus fruits, as well as fats or starches. Simply wipe and it shines like new.

To create the Performer series, WÜSTHOF designers Björn Berger and Dominik Trautmann involved four top chefs. Why? They know that perfection is hiding in details that only a master chef notices. Like whether the knife shifts easily between cutting rhythms, whether it glides equally smoothly through different foodstuffs, and whether it feels as comfortable after working for an hour at high speed. Their goal with the Performer was to bring the magic of expert cutting to all who love food.

These four top chefs helped the design team perfect Performer knives. The expert critique of Renato Manzi, Anika Schmidt, Alexander Scharmberg and René Steinbach helped Wüsthof’s designers perfect these knives for every type of use, in the kitchen and at the table. They brought not only their immense knowledge and skill at cooking but their experiences as show cook, athlete, music lover, teacher and gardener. These very different personalities have a love of conviviality in common, which they have devoted their lives to sharing. They are the godparents of the series and we think you’ll love to meet them.

Meet the chefs who helped design these knives

The Japanese chef’s knife is powerful and versatile: whether rhythmically chopping herbs, vegetables and fruit or precisely slicing through meat and fish, the extremely sharp blade produces fine to wafer-thin cuts. A chef’s knife with a wide blade is a remarkably powerful tool that is inspiring and easy to use when preparing and plating fresh food. Diamond-like carbon (DLC) coating: the DLC-coated blade is the gold standard on the knife market. Thanks to the lotus effect, it glides almost effortlessly through hard and soft ingredients and is also extremely durable and scratch-resistant.
