This oatmeal bar is a perfect, mildly sweet breakfast with a fresh fruit compote on top.
Method:
- Preheat oven to 350°F (180°C).
- Combine the oats, brown sugar, baking powder, salt, and cinnamon in a large mixing bowl. Stir to combine.
- Add the oil, eggs, and milk and stir to combine. Add the craisins and stir once more.
- Scoop the oat mixture into the USA Pan Square Cake Pan and bake for 30 minutes. The oatmeal should be lightly browned, slightly crisp on top and around the edges. A knife inserted will come out mostly clean with wet crumbs.
- Remove from the oven and let cool for 10 minutes before serving.
- While the baked oatmeal is cooling, keep the oven heated to 350°F (180°C).
- Grate about 2 tsp of orange zest. Combine all of the ingredients in a large mixing bowl and toss gently to coat.
- Place the berry mixture in the USA Pan Rectangular Cake Pan. Bake for 15-20 minutes, or until the berries are slightly softened.
- Use to top the baked oatmeal.
