With its pointed 9 cm blade, the Shun Classic Paring Knife excels at peeling, trimming, and detailed preparation of fruit and vegetables. The slightly longer blade length offers added versatility, making it easy to work with larger produce such as apples or potatoes, while still providing the delicacy needed for tasks like trimming strawberries, deveining prawns, or chopping garlic and ginger on the board. Rooted in the ancient samurai swordmaking tradition, each Shun Classic knife is handcrafted in Japan through a meticulous process involving more than 100 steps. The Classic range combines timeless blade shapes with innovative design, making it an ideal entry point into Japanese knives while delivering performance that seasoned cooks appreciate.
At the heart of the blade is Shun’s proprietary VG MAX steel, prized for its exceptional edge retention and strength. This cutting core is clad with 34 layers of Damascus stainless steel on each side, creating a flowing layered pattern revealed through grinding and bead blasting. Finished with a heritage blade surface, the knife develops character over time while subtly disguising fine scratches.

Use & Care:
Using Your Shun Knife
- Use a smooth slicing or push cutting motion rather than forceful chopping
- Avoid twisting, prying or bending the blade sideways
- Do not cut bones, joints, frozen foods or very hard items
- Allow the fine edge to do the work for the best performance
Cutting Surfaces
- Use wooden boards, wood composites or medium-firm synthetic boards
- Avoid glass, marble, granite, stone or ceramic surfaces
- Hard surfaces will dull or damage the blade edge quickly
Cleaning & Drying
- Hand wash only using warm water and mild dish soap
- Avoid citrus-based soaps, bleach or abrasive cleaners
- Rinse thoroughly after washing
- Dry immediately with a soft towel
- Do not soak or leave the knife in standing water
- Never place in the dishwasher
Storage
- Store in a knife block, magnetic strip, drawer tray or blade guard
- Ensure the blade is fully dry before storage
- Do not store loose items in a drawer without protection
