One mechanism for each spice

Peugeot mills boast world-leading mechanisms that come with a limited lifetime guarantee. The manual mills are guaranteed for 5 years, and electric mills are guaranteed for 2 years. The warranty does not cover improper use, accidental and wilful damage or wear and tear. To ensure the long life of your grinders, please read the instructions supplied with each grinder as well as the information below.

Each mechanism is designed for specific spices, and it is essential you only use that mechanism for what it is intended for. Read below for what each mechanism is used for and how to care for them.


 

How to Identify your Mill

With it being essential that your mill is only filled with the correct spice, it would be a good idea to easily identify the difference between your salt & pepper mills.

If your mill has a white band or lion on the knob it features a salt mechanism, if it has a black band or lion on the knob it has a pepper mechanism

To give you a second chance once the top is off, the internal plastic support is also coloured white for salt and black for pepper


 

General Mill Care & Use

Please read the instructions supplied with each mill. Use of incorrect spices or improper care use may cause faults in your grinder.

Never put salt into pepper grinders or pepper into salt grinders

Always keep your mills in a dry environment. This can prevent any moisture buildup inside your mill that could result in it clogging up. Do not hold over steaming water. Should the inside of the grinder become damp, simply unscrew the base and dry the inside of the cylinder and teeth thoroughly.

To clean:

Wipe the outside with a damp cloth. Never dishwash!

Over time, any mill may require some maintenance and an occasional cleaning of the teeth and shaft is recommended. Use a fine brush to dust off any spice residue from the mechanism.


 

Peugeot mill tips!

  • Fill mills little and often
  • Put a few grains of rice in the salt mill to avoid moisture
  • Always crank in a clockwise direction. Don’t go forward and back!
  • When adjusting the mechanism, always turn it upside down to ensure the mechanism is empty of the previous size grounds
  • Give the mill a shake after grinding to avoid excess grounds falling out

 

Pepper Mechanism

The specific pepper mechanism is equipped with a helix-shaped double row of teeth that guide and hold the peppercorns for a perfect grind. Created to enhance the flavour of pepper by first cracking the peppercorns and then grinding them, the Peugeot pepper mill releases the pepper’s essential oils which intensifies the aroma and flavour of this spice. The mechanism also has a patented treatment that protects the steel from corrosion while maintaining its sharpness and wear resistance.

Which sort of pepper should be used?

To get the best results, we recommend you to use only dry, hard, whole peppercorns that are 5 mm (1/4″) or less in diameter. Black, white and dry green peppercorns can be ground in Peugeot pepper mills. The pink berries can be ground only if in a blend (max 15% pink) with one of these other peppercorns. Dried coriander seeds are also suitable for the pepper mechanism.

Green Pepper:

  • The first to be picked before maturity
  • Subtly and delicately spiced, it offers freshness
  • Usually not found in supermarkets other than in dehydrated form or steeped in brine

Black Pepper:

  • Picked just before maturity, when pepper berries are yellowish
  • Peppercorns are then put to dry slowly in the sun for 48 hours under shelter or in an oven
  • Peppercorns get dark while drying

Red Pepper:

  • If the fruits are left to mature on the liana, they turn red

Pink Peppercorns:

  • Red and pink pepper shouldn’t be mixed up. They are not part of the same family.

Note: Always turn the mill head clockwise to grind


 

Salt Mechanism

The Peugeot salt mechanism is designed to grind cooking sea salt. It is made of stainless steel and is not sensitive to salt corrosion.

Which salt should be used?

To get the best out of your salt mill, you should use:

  • Salt with a diameter of 4 mm or less
  • Dry coarse salt: dry sea salt or rock salt (mined from an underground salt stream – NOT Himalayan)

Recommended Salt Brands (Available most major supermarkets)

  • Cerebos Salt for Grinders
  • Mrs Rogers
  • Empire

Do not use your Peugeot salt mill for grinding:

  • Pepper or any other spice.
  • Damp sea salt, also known as grey salt, (GuĂ©rande, RĂ©, etc.). That is because its moisture content is so high that it will corrode the mill.

 

Manual Mills

Peugeot manual mills are those that feature a manual grind adjustment nut that crowns the top of the mill. Simply turn the nut on the top of the mill to adjust the grind. Clockwise for a finer grind, counter-clockwise for a coarser grind


 

u'Select Mills

u’Select is a patented grind control system from Peugeot that can be found in electric and manual grinders. From coarsely ground pepper or salt to the very fine, u’Select offers pre-adjustments.

  • 6 pre-set levels of grind for pepper
  • 6 pre-set levels of grind for salt

Simplicity:

Just turn the ring at the base of the mill and select one of the positions, each one corresponds to a consistent grind size. Turn the mill upside down while doing so to ensure no spices are clogged in the mechanism when adjusting the grind size.

Occasionally large peppercorns may get stuck in the grinding mechanism preventing the mill from working efficiently. To remedy this, please empty the pepper mill completely, make sure that the mechanism is turning freely and refill with fully dried peppercorns.
