Humble chicken thighs and drumsticks reach celebratory heights when wrapped in Parma ham and roasted in the Toughened Non-Stick Shallow Casserole with sliced chorizo, tomatoes and a hint of chilli.
INSTRUCTIONS:
Preheat the oven to 200C.
Heat a little vegetable oil in a TNS Shallow Casserole, and brown the chicken pieces.
Wrap the chicken pieces in the Parma ham, and set aside.
In the same pan, fry the onion and chorizo until brown. Add the chicken pieces back to the pan, and pour in the tinned tomatoes, cherry tomatoes and chillies. Season with salt and pepper.
Cover with lid and roast in the oven for 30-40 minutes.
Season with salt, fresh ground pepper and fresh basil. Serve immediately.
