Method:
- Prepare the Grill: Preheat the grill or grill pan to medium-high heat.
- Prep the Peaches: Brush peach halves lightly with olive oil to prevent sticking.
- Make Mascarpone Cream: In a bowl, gently fold together mascarpone, honey, and vanilla until smooth. Set aside.
- Grill the Peaches: Place peach halves cut-side down on the grill. Cook for 3-4 minutes until beautiful grill marks appear. Flip and grill for another 3-4 minutes until tender and caramelised.
- Plate and Garnish: Arrange grilled peaches on serving plates. Add a dollop of mascarpone cream to the centre of each peach half.
