  • 4 large ripe peaches, halved and pitted (you could also use apricots)
  • 200g mascarpone cheese
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 3-4 tbsp Sticky Balsamic Pearls Original
  • 2 tbsp olive oil
  • Fresh thyme or mint leaves for garnish
  • Optional: chopped pistachios or almonds

Method:

  1. Prepare the Grill: Preheat the grill or grill pan to medium-high heat.
  2. Prep the Peaches: Brush peach halves lightly with olive oil to prevent sticking.
  3. Make Mascarpone Cream: In a bowl, gently fold together mascarpone, honey, and vanilla until smooth. Set aside.
  4. Grill the Peaches: Place peach halves cut-side down on the grill. Cook for 3-4 minutes until beautiful grill marks appear. Flip and grill for another 3-4 minutes until tender and caramelised.
  5. Plate and Garnish: Arrange grilled peaches on serving plates. Add a dollop of mascarpone cream to the centre of each peach half.
  6. The Star Moment: Generously scatter Sticky Balsamic Pearls Original over and around the peaches – they provide incredible bursts of sweet-tangy flavour that complement the caramelised fruit perfectly!
  7. Final Touch: Garnish with fresh herbs and serve immediately while the peaches are still warm.
