The Shun Classic 5 Piece Block Set comes with a free commemorative Shun Hinoki-Cypress cutting board. The Shun Classic 7 Piece Block Set is beautifully presented in a solid wooden block with extra open slots so you can continue to expand your Shun collection. 

Included in the set is a 9cm Paring knife that sits well in the hand, with a small pointed blade suited for precise tasks such as trimming and peeling fruit and vegetables. A Chef’s 20cm knife is designed in the traditional European shape and arguably the most versatile of all knives in the kitchen. A traditional Japanese all-purpose Santoku 18cm, suitable for slicing, dicing, and chopping. A pair of soft-handled Kitchen Scissors with blades that easily separate for quick wash-up – perfect for a variety of tasks ranging from cutting herbs to butterflying a chicken.

Shun 10 Million Anniversary commemorative chopping board is made of Hinoki Cypress, a Japanese wood that is highly regarded for its durability, natural antimicrobial properties, and gentle treatment of knives. The wood’s subtle aroma adds a pleasant touch to the kitchen, and its fine-grained surface prevents food from slipping during preparation. The use of a Hinoki Cypress cutting board is a traditional and essential element of Japanese culinary culture, representing a long history of craftsmanship and reverence for natural materials.

Born of the ancient samurai swordmaking tradition and hand-finished for precision and beauty, Shun Classic is the perfect line for those making their first foray into the Japanese knife market. Shun Classic’s proprietary high-performance VG-MAX steel, which provides incredible edge retention, is clad with 34 layers of Damascus stainless steel on each side (a total of 69 layers). Use & Care:

Using Your Shun Knife

  • Use a smooth slicing or push cutting motion rather than forceful chopping
  • Avoid twisting, prying or bending the blade sideways
  • Do not cut bones, joints, frozen foods or very hard items
  • Allow the fine edge to do the work for the best performance

Cutting Surfaces

  • Use wooden boards, wood composites or medium-firm synthetic boards
  • Avoid glass, marble, granite, stone or ceramic surfaces
  • Hard surfaces will dull or damage the blade edge quickly

Cleaning & Drying

  • Hand wash only using warm water and mild dish soap
  • Avoid citrus-based soaps, bleach or abrasive cleaners
  • Rinse thoroughly after washing
  • Dry immediately with a soft towel
  • Do not soak or leave the knife in standing water
  • Never place in the dishwasher

Storage

  • Store in a knife block, magnetic strip, drawer tray or blade guard
  • Ensure the blade is fully dry before storage
  • Do not store loose items in a drawer without protection

Honing & Sharpening

  • Hone regularly to realign the edge and maintain sharpness
  • Use a suitable honing steel or guided system
  • When dull, sharpen with whetstones or a professional service
  • Maintain the original 16° double bevel edge for best results
