Named after the Japanese phrase meaning “three virtues”, this knife excels at slicing, dicing and mincing, making it an indispensable companion for everyday food preparation.

Its broad, flat blade profile is particularly effective when chopping vegetables, allowing full contact with the cutting board for fast, efficient preparation. The added weight provides extra cutting power through dense ingredients such as pumpkin, sweet potato and celeriac, while the razor-sharp edge also glides effortlessly through meat, fish and fresh herbs. Each blade features a premium three-layer construction with a hard CROMOVA 18 SANSO stainless steel core protected by softer SUS410 stainless steel outer layers for exceptional durability, edge retention and corrosion resistance.   • Use wooden or quality plastic cutting boards to preserve the finely honed edge.
  • Avoid cutting frozen foods, bones or other extremely hard materials.
  • Store in a knife block, magnetic knife rack or blade guard to protect the cutting edge.
  • Maintain the edge regularly using a quality ceramic or diamond sharpener.
  • Restore the blade when required with a premium whetstone to preserve the factory edge geometry.
  • Do not use traditional metal sharpening steels, as they may damage the fine Japanese cutting edge.
