The heel of this Global G-81 Fluted 15cm Vegetable Knife is square-shaped, convenient for removing stalks and eyes from vegetables.
Ideal for chopping, slicing & dicing of all vegetables. Also known as a Nakiri Knife, this Vegetable knife is a popular alternative to a Santoku knife. The relatively flat parts of the blade are designed to chop through fruit and vegetables and come into full contact with the chopping board and give a clean cut. The front of the blade is more curved like a chef’s knife, to allow the knife to be rocked gently forward after each cut and encourage correct technique. The purpose of a scalloped edge/fluted knife is to reduce the adhesion of the food to the blade and reduce food from sticking to the blade while you’re cutting. This then provides clean slices that fall away from the blade. The G-81 is the fluted version of the G-5 Vegetable Knife 18cm and the larger version of the 14cm GS-91 Vegetable Knife

The G Series is a classic and the most popular collection of large knives, these knives can be used for general preparation and also for the more adventurous chef. Made from a 3-piece construction, two identical handle pieces are welded together and polished forming a hollow handle which is then perfectly balanced with the filling of sand. Lastly, the handle is fused to the patented CROMOVA 18 stainless steel blade.
