The Global GF-31 Drop-forged 16cm Boning Knife is good for removing bones from beef and pork. The GF-31 is essentially the fully forged version of the more popular G-21 Boning Knife. Both knives have long thin blades which make the knife good for getting between the skin and the meat of the fish. The main difference between the two knives is the addition of a bolster. The bolster gives a lot of extra protection by preventing hands from slipping forward onto the blade. The main drawback is the fact that this blade is not as flexible. There is a trade-off between the strength of the fully forged blade and have a flexible knife. This makes the knife better for more regular use, in professional kitchen settings, where repeated use of the boning knife is needed.
Global knives are handcrafted by Japanese craftsmen and made to exacting standards from the finest CROMOVA 18 stainless steel material. These knives are ice tempered and hardened to Rockwell C56˚- 58˚ which holds a razor-sharp edge longer than any other steel and resists rust, stains and corrosion. The Global Classic collection has remained unchanged since 1985 as a true testament to its quality and unique construction. This original collection designed by Komin Yamada promises durability, quality and timeless design that captures the spirit of Global’s philosophy and insistence on excellence. The GF Series is a classic collection of larger, drop forged knives for general preparation. This range, being more durable for heavy use, is favoured by professional chefs.
