The Global GF-31 Boning Knife features a rigid 16cm blade with a sharp, narrow profile, making it ideal for removing bones from beef, pork, poultry and larger cuts of meat. The stiff blade offers excellent control when working around joints and connective tissue, while also performing well for preparing fish where additional strength is preferred over flexibility.
As the drop-forged counterpart to the Global G-21 Flexible Boning Knife, the GF-31 is designed for demanding, repetitive use in professional kitchens. Its forged construction provides greater rigidity and durability, while the integrated bolster helps prevent the hand from slipping forward during use, offering added confidence when working with raw meat and fish.
Handcrafted in Japan from forged CROMOVA 18 stainless steel, the GF-31 is ice-tempered and hardened to Rockwell C56-C58 for exceptional sharpness, long-lasting edge retention and resistance to rust, stains and corrosion. The seamless construction promotes superior hygiene, while the sand-filled hollow handle delivers the perfect balance that has made Global knives a favourite of chefs worldwide.

Use & Care:
